Chocolate Chip Buttermilk Pancakes
1 ¼ cups flour
2 T. sugar
2 t. baking powder
½ t. salt
1 egg
1 cup buttermilk (milk)
½ cup chocolate chips
Warm up griddle. Mix flour, sugar, baking powder, and salt. Then add egg and buttermilk mixture. Add chocolate chips. Use a mini ice cream scooper for the perfect size pancakes. Flip pancakes to brown other side.
Serve with butter and syrup, or just eat like a snack. Enjoy!
Fruit Surprise
Serves 4
2 (15 oz.) cans of Fruit Cocktail
8 oz. Cool Whip
¼ cup coconut (optional)
Jar of Cherries
Mix fruit cocktail and cool whip. Add coconut. Top with cherries.
Enjoy!
Grape and Ginger Ale Delight
One serving
½ cup Grape juice
½ cup Ginger Ale
Crushed ice
One scoop of vanilla ice cream
Mix juice and soda in glass. Then add ice and top with ice cream. Don’t forget to add a cherry! Enjoy!
Chicken and Angel Hair
Serves 4
Angel Hair Pasta
1 lb. boneless skinless chicken
1 can (14 oz.) Diced Tomatoes w/ Basil, Oregano, & Garlic
Cook chicken with tomatoes in frying pan. Cut in bite size pieces. Cook angel hair pasta for about 4 minutes. When pasta is done, add to frying pan with chicken and tomatoes. Let simmer for 5 - 10 minutes. Serve with bread and butter. Enjoy!
Carrot Filled Cake
Cake:
1 Box Spice cake mix, plus ingredients from box to prepare mix
1 ½ cups grated carrots
Filling:
1 (8oz.) package of cream cheese
¼ cup powdered sugar
Icing: 1 (16oz.) container cream cheese frosting
Preheat oven to 350°F. Spray your new mini tasty-fill cake pans with nonstick cooking spray. Prepare cake mix according to box directions, stir in carrots. Bake cakes 18 – 20 minutes. Cool in pans for 10 minutes. Then remove from pans.
Prepare filling: Mix cream cheese and sugar. Fill cakes and quickly flip top layer onto bottom layer. Frost cake - Enjoy!
Yogurt Fruit Shake
1 cup frozen strawberries, rasberries, banana, or blueberries
½ cup milk
1 cup vanilla yogurt
1 Tablespoon honey
Place fruit in blender followed by the milk, yogurt, and honey.
Blend until it is smooth consistency adding more milk if necessary.
Taste and add more fruit or honey if needed. Serves 1. Enjoy!
You can make this ahead of time and place in the refrigerator.
Baked Potato with Toppings
Serves 4
4 baking potatoes
Toppings of your choice
Rub potatoes with salt. Then cook your potatoes in microwave or oven. Once cooked – slit top lengthwise. Add toppings. Ask kids to help fill bowls with different toppings.
Topping ideas:
Cream Cheese, bacon pieces, ground beef, cheeses, onions, butter… Enjoy!
Milk Chocolate Fondue
2 – 11.5 oz. packages milk chocolate chips
1 cup heavy whipping cream
¼ t. mint extract
Melt chocolate chips and cream in saucepan over low heat. (Use a double broiler, if possible.) Stir until smooth.ntil smooth. Add extract.
Serve with strawberries, marshmallows, pound cake, and bananas. Be creative – Enjoy!
